Dolly Vardon Cake

Choose the hardest cake you can possibly find to make.

Combine the ingredients, stand back and smile at the resulting perfection you’ve achieved with your mixture. Place in tin.

Check cake midway through cooking, only to topple the whole thing over in the oven. The oven cleaned painstakingly by your husband only a week before.

Start from scratch. Find yourself doubting the consistency of the mixture because you’ve rushed it.

Put the cake in the oven. Stay 10 feet away from the oven for entire 1.5 hours of cooking. Worry about the result for entire 1.5 hours of cooking.

Take the cake out of the oven. Be concerned by the crystalisation on the top of the cake.

Turn the cake out onto a cooling rack. Be concerned about the colour of the cake.

Spend the entire day playing with fondant while you decorate the cake into a masterpiece.

Make a batch of cupcakes as a backup in case the cake is inedible.

Day of the birthday: Watch people ooh and aah over the cake.

Cut the cake. Nervously. Offer a piece with a large dollop of apology on the side. Followed by: here, have a sausage roll.

Receive (surprisingly) wonderful feedback about the taste of your cake.

Hide the cupcakes.

Loving the back up plan 🙂
Good old cupcakes will always do the trick 😉
Your Dolly Varden cake looks awesome – Well Done

    • Kel says:

Hehe!! Always got to have a backup plan, Kimberley!! 😉
And thank you. I was happy with it in the end – after all the stress! x

  2. LOL at the play by play – sounds like me – I now go simple (ever since trying to erect a trellis out of melted chocolate to go on the fairy garden cake LOL) note to Queenslanders – do not work with tempered chocolate in summer !

Glad it turned out well and now you have cupcakes for the week ; )

  3. I love it Kel! I have not mastered fondant at all, although trying and failing miserably several times! Maybe the next time I am brave enough to do it, it might look half decent! Great job!

    • Kel says:

Kym, I find fondant – or ready roll icing – so much easier than butter icing. I always get holes in the cake when I use butter icing. Fondant, for me, is like using playdough!!! And I’m a pretty handy playdough worker! 😉

  4. Lisa says:

Love the Dolly cake – no wonder it was a big hit at the birthday party!

    • Kel says:

Thanks Lisa. It was certainly a challenge – and something I will never attempt again – but glad to say I’ve done it! 🙂

  5. Lilly says:

That looks amazing – congrats. I tried something like that once and it was a mega fail, lol.

    • Kel says:

Hehe!! I was quickly heading in that direction, Lilly. It’s definitely harder than it looks!! I don’t know how people do this sort of thing for a living! 🙂

  6. Claudia says:

I remember dolly cakes from when I was little!! I have never seen one dressed in icing though. Very creative 🙂

  7. The birthday cake looks gorgeous! Great work!

    • Kel says:

Oh, thank you. If you look really closely you can see lots of unevent bits – which is why I never let anyone get too close at the party! LOL! 🙂

  8. Rhonda says:

Wow, lovely cake. I wonder what I can do for a boy. Perhaps a boy fishing in the ocean, water up to his waist? A square blue cake and a boy doll.

    • Kel says:

Oh Rhonda, what a clever idea. I love that! I’m going to post about it tomorrow, but one of the things I read AFTER I made this was how you could bake three square cakes, pile them on top of each other and cut the corners to make a cone. Much easier than those silly Dolly Vardon tins. That was the painful part for me!

  9. Ai Sakura says:

Such a beautiful cake! Well done 🙂

  10. Kim m says:

Love the cake!! Your daughter would have been very happy!
