    Well, first, there are some things we need to discuss. I know, I’m a tease!

    As part of this giveaway, I asked you, my dear readers, to vote in my poll to find out what it was you wanted more of on Three Li’l Princesses. It was no surprise to either me or the Bloke in The Shed that you wanted more humour. And us going head-to-head in He Said She Said.

    This is what we’ve built the site on – having a laugh. We know all too well that parenting can be challenging, but there are also those moments that make you laugh out loud.

    I’m no Naomi from Seven Cherubs, who astounds me with the way she can rear seven children and keep it all together. She is one impressive mama with a wealth of mummy knowledge to boot.

    I’m no Lori from Random Ramblings of a Stay at Home Mum, who is enduring the one thing we all fear – the loss of our child’s parent. On each visit to her site, I shed a tear and just wish I could reach out and give her a big hug. Her world has turned upside down, yet here she is helping others experiencing the same situation. Remarkable.

    I’m no Veronica from Sleepless Nights, whose son has just been diagnosed with autism, while she battles Ehlers Danlos Syndrome. It’s not uncommon for her hips, her wrists or her ribs to dislocate. I’m in awe of her strength. Not only that, you’ll find her on Twitter constantly helping others figure out this whole blogging thing.

    There are plenty more women like this floating around the blogosphere. I admire each of them for sharing their experiences and helping other mums in the same situation. They sure give me a reality check on those days when I complain about the little things in life.

    So, all I can offer in our little palace is a laugh; a place to escape the pulling-out-your-hair moments for a little “time out’’. So thanks for letting me know I’m on the right track. Oh, and giveaways… of course!

    Zucchini fritters

    OUR garden is mass producing zucchinis, to the point we just can’t keep up. And not just your average sized zucchinis – these look like they’ve been on steroids.

    Having eaten enough zucchini sliced onto pizza, chopped into soup and grated into Bolognese, slice and muffins, this week we’re returning to Julian’s Zucchini Fritters recipe. The beauty of these is they can be frozen, so you’re not eating them for the rest of the week.

    You’ll notice the menu also has an overdose of salad, due to the garden also spurting out an abundance of cos lettuces and cucumbers. Funny thing is, we’re not even very good gardeners.

    Monday: Gourmet beef pies with salad

    Tuesday:  Easy crumbed chicken strips (using fresh lemon and pepper) with zucchini fritters

    Wednesday: Smoked salmon and tomato pasta (recipe to come)

    Thursday: Leftovers (Julian not home)

    Friday: Scotch fillet steak with homemade chips and salad

    Saturday: Homemade vegetarian pizza

    Sunday: Roast pork and vegetables

    For the first time, I’m linking up with OrgJunkie’s Menu Plan Monday and hope this will become a regular. You’ll find some more menu inspiration there.

    Here’s the recipe for:

    Zucchini Fritters

    • 1 1/2 cups self-raising flour
    • 1 cup milk
    • 2 eggs
    • 2 large corn cobs, kernels removed
    • 1 zucchini, grated
    • 1 Tb olive oil
    • 1 clove garlic, chopped
    • 150g bacon, diced
    • 1 tsp mixed dried herbs
    • 50g ricotta cheese

    Lightly fry garlic and bacon. Whisk milk and eggs together. Pour into bowl with flour and stir until smooth. Add zucchini, corn, garlic, mixed herbs, ricotta, garlic and bacon and combine.

    Add oil to large frying pan. Spoon mixture (about ¼ cups worth) into pan, being careful not to overload the pan. Cook for three to four minutes each. Serve.

  • NEWS: New Zealand’s darkest day

    MOST of today was spent glued to the television as the devastation from the 6.3 earthquake in Christchurch continued to unfold.

    I sat cuddling my little baby girl Holly as words like “we may be witnessing our darkest day’’ and “I’ve never been so frightened in all my life’’ came from the TV set. I was thankful three-year-old Princess Ella was in child care.

    As a journalist, there’s a fascination with watching how people react under such extreme circumstances. But I didn’t watch this as a journalist. I watched it as a mother.

    My heart bled as I saw battered bodies pulled from buildings, listened to the quivering voices of terrified eyewitnesses or caught the sheer emotion on the faces of ordinary folk walking amongst the city’s debris. Even the newsreaders voices were shaking as they tried to deliver the news. As a viewer, that cuts deep.

    What I felt most though today was a feeling of helplessness. We spend our days nurturing and protecting our little ones, so there’s a natural instinct to want to help others. But, for now, we can’t.

    It’s not the first time this year I’ve felt this – there was the Queensland floods and then Cyclone Yasi.

    All I can really do is keep my beautiful, innocent Princess Ella from being exposed to such devastation. Maybe, for now at least, that’s enough.

    My thoughts are with all those in Christchurch.
